You'll get a lot further and probably make something more suited to your own sensibilities if you read up on the DokuWiki documentation.

But, here are some steps to get you started!

Getting around your DokuWiki can take some getting used to, so let's make it easy on ourselves. Click on the “start” link on the welcome page, or enter YOURCLASSDOMAIN.YOURMAINDOMAIN.com/doku.php?id=start into your browser navigation bar. Find the “page” option in the upper right hand corner, and select “create this page”. Click “same level heading” button (the first blue H) in the editing menu to create the page title, in between those ====== marks. This will be your landing page, so go ahead and put some filler text for now. While you're editing the page, find the “internal link” option on the editing menu (the chain link without the globe behind it) and click it. You should see an option for “sidebar” – go ahead and throw in a link to the sidebar. Hit save, and then click your sidebar link. It will take you to another “this page does not exist”: create the page. Give it a title like “navigation” or “sidebar”, and then use the internal link menu to add a link 1. to the sidebar itself (so it's easy to edit in the future), and to your “start” page. If you ever get lost in the future, you can also always navigate to YOURCLASSDOMAIN.YOURMAINDOMAIN.com/doku.php?id=start for the landing page or YOURCLASSDOMAIN.YOURMAINDOMAIN.com/doku.php?id=sidebar for the sidebar.

Go to the dokuwiki templates page and pick something out that suites your needs. This page is the “minimalist” theme. Then, navigate to user>admin>extension manager>search and install, put in your chosen theme name, and hit “install” when it comes up. While you're there, go ahead and install the “bureaucracy” and “pagemod” plugins–we'll use these in the future to create contact and assignment submission forms.
